Hawaiian Pork

Ingredients:

3-4 cups roasted pork, cubed
2 15 oz. cans pineapple chunks, reserve juice
2 T. soy sauce
1/4 cup brown sugar
1/3 cup white vinegar
3 T. corn starch
2 red or green peppers, cut into bite-size pieces
1 medium onion, sliced thin into rings
2 c. long grain rice, cooked according to package directions.

Directions:

Combine juice from pineapple, soy sauce, brown sugar, vinegar, and cornstarch; simmer over low heat, stirring constantly until sauce is thick and shiny. Pour over meat; let stand 10 to 30 minutes. Add onion rings, pineapple chunks and bell pepper; cook until onion and pepper are tender but not overcooked, serve over rice.

This can be put together the night before and put in the oven when you're ready to fix dinner, just put meat mixture into a greased baking dish and cover till ready to cook.
